Tiring supper!

In contemplating my first entry rather than posting something that showcases me as this professional domestic engineer I decided to show you what happened last night. While it was less than perfect of a meal it was a special moment in our household that I would like to remember.

My husband and I were thinking of bringing our son to Grandpa and Grandma's and going out to eat. While this was a grand idea my hubby was completely worn out from work and ready to just relax and not think about plans or whatnot that would go along with a date night.

So we stayed in and I cooked up a vegetarian meal of black bean spanish rice, corn on the cob, and "Deluxe creamed peas" (compliments of my old school Better Homes and Garden's book "Low cost cooking" that I found at a thrift store). This was a 4 pot meal. I am not sure if I would make the exact meal over again for that reason. My hubby was kind enough to help me with the dishes afterward. *insert heart flutter*



I ended up mixing the spanish rice and creamed peas together on my plate. I tend to mix the sweet and salty together. Like putting guacamole on my mashed potatoes. Yum! Don't knock it until you try it.




Of course i can not forget the cutest part of our meal. Mr. "I don't want to take a nap" crashed after eating his corn on the cob.

I remember the early days of a young family, and appreciate the difficulties of the choice to remain a SAHM, but as I look back...know that it is well worth it! Looking forward to hearing more when time permits.

  2. Aw! Julia loves corn on the cob and can't get enough of it lately. (but hates corn off the cob??? lol)
